January is… character building. It’s sad, it’s cold, a bit grid and the sun has officially left the building. So instead of pretending it’s “a fresh start”, we want to give something to keep going without guilt.
Meet VITAMIN P – our January Guest Pizza, designed to bring a little slice of sunshine to the saddest month of the year. Because if the sun won’t show up, we will.
This is a pizza that actually does something besides making you forget it’s January. We’ve teamed up with a UK mushroom producer growing shiitake mushrooms under UV lights, which boosts their Vitamin D content (yes, actual science).
Handy, because during a British winter, the sun is basically a myth. Those mushrooms sit on a rich mushroom pesto base, topped with Fior di Latte, a deeply satisfying smoked Provola mozzarella (which does absolutely everything for your soul), golden egg yolk, and a drizzle of extra-virgin olive oil to help your body soak up the good stuff. All in, your entire recommended daily intake of Vitamin D*, like what?

To help things along, we’ve also paired it with our latest mocktail creation – the Lem Spritz – made with ginger, lemon, our house-made hot honey, mint, and sparkling water. It’s refreshing, uplifting, and packed with vitamins B and C and antioxidants. Basically, January’s emotional support drink.
A bit of sunshine on a plate, a bit of positivity in a glass, and our humble attempt to make the darkest month of the year slightly more positive 🍕☀️

Retail sector has been ahead of this already: Tesco originally started selling UV enriched mushrooms back in 2016 (article) and Sainsbury’s as well.
RDI of vitamin D in UK is 10 mgr. In winter months in UK, there is not enough natural source to get this. A portion of 4-5 mushrooms (or about 75gr) that have been treated with UV lights is enough to get the RDI of vitamin D. Our Vitamin P pizza will contain about 100gr of shiitake mushrooms treated with UV lights so well above the RDI.
